Peach Muffins with Vanilla Glaze
Ingredients:
For the Muffins:
1 1/2 cups all-purpose flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt
1/3 cup vegetable oil
1/2 cup milk
1 large egg
1 tsp vanilla extract
1 cup diced fresh peaches
For the Topping:
1/4 cup brown sugar
1/2 tsp cinnamon
For the Glaze:
1/2 cup powdered sugar
1–2 tbsp milk
1/4 tsp vanilla extract

Instructions:
1. Preheat the Oven:
Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly.
2. Prepare the Batter:
In a large bowl, combine flour, sugar, baking powder, and salt. In another bowl, whisk together oil, milk, egg, and vanilla. Gradually mix the wet ingredients into the dry ingredients until just combined. Fold in the diced peaches gently.
3. Fill the Muffin Tin:
Divide the batter evenly among the muffin cups, filling each about 2/3 full.
4. Add the Topping:
Mix brown sugar and cinnamon, then sprinkle over the muffins.
5. Bake:
Bake for 18–20 minutes or until a toothpick inserted into the center comes out clean. Allow to cool slightly before removing from the tin.
6. Make the Glaze:
In a small bowl, whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled muffins.
