These Healthy Chocolate Brownie Cookies are rich and fudgy but are made with oat flour, almond flour and coconut sugar for a more nutritious option.

Ingredients
1cupoat flour
2tablespoonalmond flour
¼cupcocoa powder
½teaspoonbaking soda
¼teaspoonsalt
6tablespoonbuttermelted and cooled for 5 minutes
½cupcoconut sugar*or brown sugar
1egg
2teaspoonvanilla extract
1tablespoonmilk
½cupchocolate chips
¼cupdark chocolate bar,chopped
flakey sea salt,for sprinkling
Instructions
- Preheat the oven to 350F and line a large cookie tray with parchment paper.
- In a medium bowl, whisk together oat flour, almond flour, cocoa powder, baking soda and salt.
- In a separate large bowl, whisk together melted and cooled butter and coconut sugar. Once that is thoroughly combined, whisk in the egg, vanilla and milk.
- Slowly add the dry ingredients to the wet ingredients. Mixing to combine. Mix in chocolate chips and chocolate chunks.
Scoop the dough into 12 balls (about 2 tablespoon per ball) and place onto the prepared baking sheet. Gently press down the tops of the cookies to flatten them. and bake for 9-11 minutes.
Once baked, top with flakey sea salt before enjoying.
