Salty, addictive and way crispier than oven baked. These air fryer diced potatoes are the easiest side for any protein or veggie.

Ingredients
2lbswhite skinned potatoes4 medium potatoes
2tablespoonolive oil
1teaspoongarlic powder
1teaspoonpaprika
1teaspoonsalt
½teaspoonblack pepper
1tablespoondried rosemary
Juice + zest of ½ a medium lemonoptional
¼cupparmesan cheeseoptional
Instructions
- Preheat air fryer to 400F.
- Use a sharp knife to dice potatoes into ½’-¾; inch cubes. You do not need to peel them, just wash and dry them.
- Add potatoes to a mixing bowl and toss with olive oil. Once fully coated, add spices and lemon juice.
- Place potatoes in an air fryer liner or in the basket of your air fryer (this may need to be done in batches). Bake for about 15-20 minutes, shaking halfway. If using, add parmesan in the last 5 minutes of cooking.
Notes
Cook time will depend on your air fryer. I find my potatoes are perfectly crispy at 18 minutes, but I recommend beginning to watch them at 15 minutes to avoid burning.
