Prep Time: 10 min | Cook Time: 20 min | Total Time: 30 min | Course: Side Dish | Cuisine: American | Keyword: air fry, Sides | Servings: 4cups

Ingredients

2lbswhite skinned potatoes4 medium potatoes

2tablespoonolive oil

1teaspoongarlic powder

1teaspoonpaprika

1teaspoonsalt

½teaspoonblack pepper

1tablespoondried rosemary

Juice + zest of ½ a medium lemonoptional

¼cupparmesan cheeseoptional

Instructions

  • Preheat air fryer to 400F.
  • Use a sharp knife to dice potatoes into ½’-¾; inch cubes. You do not need to peel them, just wash and dry them.
  • Add potatoes to a mixing bowl and toss with olive oil. Once fully coated, add spices and lemon juice.
  • Place potatoes in an air fryer liner or in the basket of your air fryer (this may need to be done in batches). Bake for about 15-20 minutes, shaking halfway. If using, add parmesan in the last 5 minutes of cooking.

Notes

Cook time will depend on your air fryer. I find my potatoes are perfectly crispy at 18 minutes, but I recommend beginning to watch them at 15 minutes to avoid burning.
