Meal Prep Recipe Double Chocolate Frozen Yogurt Bites

Double Chocolate Frozen Yogurt Bites are a delicious sweet treat that are low sugar and a source of protein, calcium and healthy fats!

Ingredients

1+¼ cup plain full fat yogurtboth plain yogurt and greek yogurt will work

½cup+ 2 tablespoon natural peanut butterit should be runny!

3tablespoonhoney

1.5teaspoonvanilla extract

2.5tablespooncocoa powder

Pinchof sea salt

¾cupchocolate chips

1teaspooncoconut oil

¼cuppeanutschopped

Instructions

  • In a medium icing bowl, mix together yogurt, peanut butter, honey, vanilla extract, salt and cocoa powder.

Divide the yogurt mixture amongst the cavities or a silicone chocolate mold until the cavities are about ¾ full (for the mold I used I added about 1 tablespoon to each cavity).

  • Melt the chocolate chips by adding them to a microwave safe bowl along with the coconut oil. Microwave in 30 second increments, stirring between until fully melted (about 1 minute 30 seconds).

Cover the top of the yogurt with a layer of chocolate.

  • Top with chopped peanuts and additional sea salt if desired. Freeze until completely frozen. Enjoy straight out of the freezer!

Notes

For a higher protein option: substitute the regular yogurt with plain greek yogurt and replace the cocoa powder with chocolate protein powder.

If your peanut butter is not runny enough, pop it in the microwave for about 30 seconds before adding.

The mold I used was quite small. If you prefer to use a larger silicone mold such as the one I used for my egg bites you absolutely can.
