Greek Marinated Chickpeas

Inspired by Trader Joe’s, these Greek marinated chickpeas are spiced with oregano, cumin, fresh parsley and lemon. A flavorful addition to wraps, salads and bowls!

Ingredients

2x 19 oz cans of chickpeasrinsed and drained

¼cupextra virgin olive oil

1lemonjuice and zest

1.5teaspoonground cumin

½teaspoonsalt

½teaspoonblack pepper

½teaspoongarlic powdersee notes

1teaspoondried oregano

3tablespoonfresh parsleyfinely chopped

¼cupred onionfinely diced, optional

Instructions

  • In a medium mixing bowl, combine chickpeas, olive oil, lemon juice, lemon zest, ground cumin, salt, black pepper, garlic powder, dried oregano, parsley and red onion.
  • Stir to combine. Serve immediately or marinate for 1 hour for the most flavour.

Notes

2 cloves fresh garlic can be used in place of garlic powder if desired.
