This easy, delicious teriyaki salmon meal is SO good, made all on one sheet pan and ready in 20 minutes!
Yield: 2Servings | Serving Size: 1filet with 1 cup veggies
Ingredients
For vegetables:
2cupsbite-size broccoli florets
10mini sweet rainbow peppers, seeded and halved
1tablespoonsesame oil
¼teaspoonkosher salt
Freshly ground black pepper, to taste
For salmon:
2(4-ounce)wild salmon filets
1teaspoonsesame oil
1garlic clove, grated
½teaspoongrated ginger
2tablespoonsreduced sodium soy sauce, or gluten-free soy sauce
1teaspoonunseasoned rice vinegar
1teaspoonbrown sugar
For garnish:
½teaspoontoasted sesame seeds
1large scallion, chopped
Instructions
- Preheat oven to 400F degrees. Cover a large sheet pan with foil or parchment, lightly spray olive oil and set aside.
- Meanwhile, combine sesame oil, garlic, ginger, soy sauce, vinegar and brown sugar in a small bowl and mix. Pour into a large ziplock bag and add salmon, marinate 10 minutes.
