Ingredients
2tablespoonextra virgin olive oil
3tablespoonsred wine vinegar
1/2tablespoonItalian seasoning
1cloveminced garlic
1/4tspteaspoon kosher salt
8cupschopped iceberg or romaine lettuce, chopped
6ouncesthin sliced turkey, chopped
2ouncesthin slices genoa salami, chopped from about 6 thin slices
3ouncesturkey pepperoni, chopped
2ouncesCapicola, chopped
1/3cupshredded part-skim mozzarella & provolone mix, low moisture
1/3cupcherry tomato, chopped
1/4cupred onion, sliced
1/4cuppickled pepperoncini or banana peppers, sliced (plus 1 tablespoon brine)
1/4cupblack olives, sliced
Instructions
In a small bowl, whisk olive oil, vinegar, 1/2 tablespoon italian seasoning, garlic, salt and 1 tablespoon brine from pepperoncini.
- Add a large bowl add the lettuce, turkey, salami, pepperoni, capicola, cheese, tomato, red onion, pepperoncini and black olives.
Drizzle in the dressing when ready to eat and toss to coat.
