Ingredients

1cupsliced celery
1 1/3cupsgood quality mixed Italian pitted olives, such as Castelvetrano and Kalamata Olives, halved lengthwise
1/4cupchopped red onion
5clovesgarlic, minced
1/4cupchopped parsley
1/4cupextra virgin olive oil
juice of 2 small lemons
1/2teaspoonkosher salt
black pepper, to taste
