Hearty Vegetable Beef Soup
Ingredients:
500g ground beef
1 medium onion, diced
2 cloves garlic, minced
2 medium carrots, sliced
2 celery stalks, chopped
1 zucchini, diced
1 can diced tomatoes (400g)
1 can kidney beans, drained and rinsed
1 can cannellini beans, drained and rinsed
4 cups beef broth
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
1. In a large pot, cook ground beef over medium heat until browned. Drain any excess fat.
2. Add onion and garlic to the pot, cooking until softened.
3. Stir in carrots, celery, and zucchini. Cook for 5 minutes, stirring occasionally.
4. Add diced tomatoes, both types of beans, beef broth, Italian seasoning, salt, and pepper. Stir well.
5. Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes, or until the vegetables are tender.
6. Serve hot, garnished with fresh parsley.
