Grilled Chicken with Chimichurri Sauce over Rice
Ingredients:
2 chicken breasts
2 tbsp olive oil
1 tsp garlic powder
1 tsp dried oregano
Salt and pepper to taste
1 cup cooked white rice
Chimichurri Sauce:
1 cup fresh parsley
1/4 cup fresh cilantro (optional)
2 cloves garlic
2 tbsp red wine vinegar
1/4 cup olive oil
1/2 tsp red pepper flakes (optional)
Salt and pepper to taste
Instructions:
1. Marinate the Chicken:
Rub chicken breasts with olive oil, garlic powder, oregano, salt, and pepper.
Let it marinate for at least 30 minutes.
2. Prepare Chimichurri Sauce:
In a food processor, blend parsley, cilantro, garlic, vinegar, olive oil, red pepper flakes, salt, and pepper until smooth.
3. Grill the Chicken:
Heat a grill pan or outdoor grill over medium-high heat.
Grill chicken for 5-7 minutes on each side until fully cooked.
Let the chicken rest for a few minutes, then slice.
4. Assemble the Dish:
Place cooked rice on a plate.
Arrange sliced grilled chicken on top of the rice.
Drizzle with chimichurri sauce and garnish with fresh parsley.
