½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon kosher salt

1 cup (200 g) granulated sugar

6 tablespoons (84 g) unsalted butter, at room temperature

3 (150 g (weighed out of shell)) eggs, at room temperature, beaten

1 tablespoon pure vanilla extract

3 tablespoons (1 ½ fluid ounces) warm water, plus more as necessary

Confectioners’ sugar, for sprinkling

6 tablespoons (84 g) unsalted butter, at room temperature

7 tablespoons (84 g) vegetable shortening

4 ounces semi-sweet chocolate, chopped

2 ½ cups (288 g) confectioners’ sugar, plus more as necessary

1 tablespoon (21 g) light corn syrup

12 ounces semi-sweet chocolate, chopped

½ cup (4 fluid ounces) heavy whipping cream

Instructions

MAKE THE CAKE BATTER

In a large bowl, place the flour, xanthan gum, cornstarch, baking powder,.

baking soda, salt and sugar, and whisk to combine.

Add the butter, eggs, vanilla and 3 tablespoons water, mixing well after each.
