Ingredients

1 tbsp olive oil
1 small onion, finely diced
3 garlic cloves, minced
1 lb ground beef or Italian sausage
1 can (14 oz) crushed tomatoes
1/4 cup tomato paste
1 tsp dried basil
1 tsp dried oregano
1 tsp smoked paprika (optional)
Salt and pepper to taste
4 cups chicken or beef broth
6 lasagna noodles, broken into bite-sized pieces
1 cup heavy cream or half-and-half
For the Cheese Topping:

1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Ricotta cheese for dolloping
Fresh parsley for garnish (optional)
Instructions
Step 1: Cook the Meat Base

Heat olive oil in a large pot over medium heat.
Add diced onion and sauté until softened.
Stir in minced garlic and cook for 1 minute.
Add ground beef or sausage, cooking until browned. Drain any excess fat.
Step 2: Build the Soup

Add crushed tomatoes, tomato paste, basil, oregano, paprika, salt, and pepper to the pot. Stir to combine.
Pour in the broth and bring the mixture to a boil.
