Cranberry Pistachio Loaf Cake
Ingredients:
2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter, softened
1/2 cup milk
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup fresh cranberries
1/2 cup chopped pistachios
1/2 teaspoon cinnamon
1/4 cup powdered sugar (for dusting)
Instructions:
1. Preheat oven to 350°F (175°C) and grease a loaf pan.2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.3. In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.4. Gradually add dry ingredients, alternating with milk, mixing until just combined.5. Fold in cranberries and chopped pistachios.6. Pour batter into the prepared pan and smooth the top.7. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.8.
