1/4 cup olive oil
1 tablespoon fresh lemon juice
1 tablespoon lemon zest
2 tablespoons capers, drained and chopped
1 clove garlic, minced
1 tablespoon Dijon mustard
1 teaspoon honey or maple syrup (optional)
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 tablespoon fresh parsley, chopped (optional for garnish)
Directions:
In a small bowl, combine the olive oil, lemon juice, lemon zest, and Dijon mustard. Whisk together until smooth.
Stir in the minced garlic, capers, salt, and black pepper. Mix well.
Taste and add honey or maple syrup for a slight sweetness, if desired.
Pour the sauce into a small saucepan and heat over low for 2-3 minutes to combine the flavors.
Remove from heat and garnish with fresh parsley, if desired. Serve immediately.
