Ingredients
500gramschicken lollipop
2tablespoonsSoy sauce
2teaspoonsRed chilli sauce
1tablespoonsVinegar
1tablespoonsTomato ketchup
1tablespoonsRed chilli powder
1tablespoonsGarlic paste
1/4tablespoonsSalt
1/4cupCornflour
2tablespoonsAll purpose flour
2tablespoonsRice flour
1Egg
1tablespoonsGinger paste
Oil, for frying
For the Drums of Heaven:
12-14Chicken Lollipops, Fried
2tablespoonsOil
1tablespoonGinger, finely chopped
1tablespoonGarlic, finely chopped
1/4cupOnions, finely chopped
2Green Chillies, finely chopped
1/4cupSchezwan Sauce, or Sriracha
1tablespoonLight Soy Sauce
1teaspoonVinegar
2tablespoonsTomato Ketchup
1teaspoonSugar
1/2teaspoonCornstarch / Cornflour , mixed in 4 tablespoons water to make a slurry
2tablespoonsCoriander, finely chopped
2teaspoonswhite sesame seeds
2tablespoonsSpring Onions, finely chopped (green part only)

Instructions
For the Chicken Lollipops:
- Whisk together soy sauce, red chilli sauce, vinegar, tomato ketchup, red chilli powder, garlic paste, salt in a bowl and toss the chicken lollipops in it. Marinade for half an hour.
- In the same bowl, add cornflour, all purpose flour, rice flour, egg and ginger paste and mix well to create a thick batter and coat the lollipops in it.
