Chicken Burritos
Ingredients:
2 large flour tortillas
1 ½ cups cooked shredded chicken
½ cup corn kernels (fresh, canned, or frozen)
½ cup diced tomatoes
¼ cup salsa
2 tablespoons chopped fresh cilantro
1 teaspoon chili powder
½ teaspoon cumin
½ teaspoon garlic powder
Salt and black pepper to taste
Optional: shredded cheese, sour cream, or avocado slices
Instructions:
1. Prepare the Filling:
In a mixing bowl, combine shredded chicken, corn, diced tomatoes, salsa, cilantro, chili powder, cumin, garlic powder, salt, and black pepper. Mix well until evenly combined.
2. Assemble the Burritos:
Place a tortilla flat on a clean surface. Spoon half of the chicken mixture onto the center of the tortilla. Add optional toppings like shredded cheese, sour cream, or avocado slices if desired. Fold in the sides of the tortilla, then roll it tightly into a burrito. Repeat with the second tortilla.
3. Toast the Burritos:
Heat a skillet or griddle over medium heat. Place the burritos seam-side down and cook for 2-3 minutes on each side until golden and crispy.
4. Serve:
Slice the burritos in half and serve warm with additional salsa or guacamole on the side.
