Cheesy Meatball Potato Bake Recipe
Ingredients
1 lb ground beef (or mix of beef and pork)
1/2 cup breadcrumbs
1 large egg
1/4 cup grated Parmesan cheese
1 tsp garlic powder
1 tsp onion powder
1/2 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
4 cups mashed potatoes (homemade or store-bought)
1 cup shredded mozzarella cheese
1/2 cup heavy cream (optional, for creamier mashed potatoes)
Fresh parsley, chopped (for garnish)
Instructions
Step 1: Prepare the Meatballs
Preheat your oven to 375°F (190°C).
In a large bowl, combine ground beef, breadcrumbs, egg, Parmesan, garlic powder, onion powder, paprika, salt, and pepper.
Mix well and shape into small meatballs (about 1 inch in diameter).
In a skillet, heat a bit of oil and brown the meatballs on all sides (they don’t need to be fully cooked, as they’ll finish in the oven). Set aside.
Step 2: Assemble the Bake
Spread the mashed potatoes evenly into a greased baking dish. If using heavy cream, mix it into the mashed potatoes before spreading for extra creaminess.
Place the browned meatballs on top of the mashed potatoes.
Sprinkle the mozzarella cheese generously over the meatballs and potatoes.
Step 3: Bake
Place the dish in the oven and bake for 20–25 minutes, or until the meatballs are fully cooked and the cheese is melted and bubbly.
Step 4: Serve
Garnish with freshly chopped parsley.
