Cheesy Beef and Vegetable Pasta Bake
Ingredients:
12 oz penne pasta
1 lb ground beef
1 small onion, chopped
2 cloves garlic, minced
1 cup mixed vegetables (peas, carrots, corn)
1 can (14 oz) diced tomatoes
1 cup tomato sauce
1 tsp Italian seasoning
½ tsp salt
½ tsp black pepper
1 ½ cups shredded cheddar cheese
¼ cup chopped fresh parsley
Instructions:
Preheat oven to 375°F (190°C). Cook pasta according to package instructions, drain, and set aside. In a large skillet, cook ground beef over medium heat until browned. Add chopped onion and garlic, cooking until softened. Stir in diced tomatoes, tomato sauce, mixed vegetables, Italian seasoning, salt, and black pepper. Simmer for 5 minutes. Combine cooked pasta with the beef mixture and transfer to a greased baking dish. Sprinkle with shredded cheddar cheese. Bake for 20 minutes or until cheese is melted and bubbly. Garnish with fresh parsley and serve warm. Enjoy!
