Cassava flour – I usually buy Otto’s Naturals brand cassava flour from

Kosher salt – Salt brightens the flavor of these flour tortillas. I use

Shortening or coconut oil – Using a fat that’s solid at cool room temperature

Water – Be sure to use warm, but not hot, water that will help the shortening

½ cup (60 g) tapioca starch

2 ½ teaspoons baking powder
