
Description
These golden, crisp Pastrami Reuben Egg Rolls with a Russian Dressing dipping sauce, make them in the air fryer or in oven, so good!
Yield: 4servings | Serving Size: 2eggrolls & 1T sauce
Ingredients
For egg rolls:
1 1/2cupssauerkraut
8egg roll wrappers
6ouncespastrami, chopped (or corned beef)
1cupshredded reduced fat Swiss cheese, I like Jarlsberg
small bowlwater, for sealing
Olive oil spray
For Russian dressing:
1/4cuplight mayonnaise
2tablespoonsketchup
1/2teaspoonWorcestershire sauce
1/2teaspoonhorseradish
Dash of hot sauce, I used Frank’s Red Hot
1/2tablespoonfresh lemon juice
1/4teaspoononion powder
Pinchkosher salt
Instructions
With a clean kitchen towel, squeeze excess liquid from sauerkraut. Set aside.
Place 1 egg roll wrapper on a clean, dry work surface with corners positioned like a diamond.
Add ¾ ounce (2 tablespoons) pastrami, 2 tablespoons cheese and 2 tablespoons sauerkraut on the bottom third of the wrapper.
Carefully lift the bottom point nearest to you and wrap it around the filling.
Dip your finger into a small bowl of water and run it along the edges of the wrapper.
