Creamy Mushroom and Spinach Orzo
Ingredients
1 cup orzo pasta
2 tbsp olive oil
2 cups mushrooms, sliced
3 cups fresh spinach
2 cloves garlic, minced
2 cups vegetable broth
1/2 cup milk or cream
1/4 cup grated Parmesan cheese
1/2 tsp dried thyme
Salt and black pepper to taste
Optional: Red pepper flakes for garnish
Directions
Sauté the mushrooms: Heat olive oil in a large skillet over medium heat. Add mushrooms and cook for 5–6 minutes until golden brown. Stir in garlic and cook for another minute.
Add orzo and broth: Stir in the orzo and vegetable broth. Bring to a simmer and cook for 8–10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
Add spinach and cream: Stir in spinach and cook until wilted. Then, add milk or cream, Parmesan cheese, thyme, salt, and pepper. Mix well and let it simmer for 2 minutes until creamy.
Serve: Garnish with a sprinkle of red pepper flakes if desired. Serve warm as a main dish or side!
