Ingredients

For the Filling:

8 oz (226 g) cream cheese, softened
1/3 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup raspberry or cherry preserves (or your favorite flavor)
For the Egg Rolls:

10 egg roll wrappers
Vegetable oil (for frying)
Optional Garnish:

Powdered sugar (for dusting)
Chocolate or caramel sauce (for dipping)
Instructions

Prepare the Cheesecake Filling:

In a mixing bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
Assemble the Egg Rolls:

Place an egg roll wrapper on a flat surface in a diamond shape.
Spoon 1 tablespoon of the cheesecake filling and 1 teaspoon of preserves near the bottom corner.
Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Seal the edge with water. Repeat with remaining wrappers.
Fry the Egg Rolls:

Heat vegetable oil in a deep pot or frying pan to 350°F (175°C).
Fry the egg rolls in batches, 2-3 at a time, until golden brown and crispy (about 2-3 minutes per side).
Remove with a slotted spoon and drain on paper towels.
Garnish and Serve:

Dust with powdered sugar and serve with dipping sauces, if desired.
Baking Option (Healthier):
Preheat oven to 400°F (200°C). Brush the egg rolls with melted butter or spray with cooking spray. Bake for 15-20 minutes, flipping halfway through, until golden and crisp.
