Ingredients
1 lb Italian sausage (mild or spicy)

1 tablespoon olive oil

1 small onion, diced

3 garlic cloves, minced

1 cup cherry tomatoes, halved

4 cups chicken broth

1 cup heavy cream

2 cups fresh spinach

1 teaspoon dried oregano

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional)

Instructions
Cook the Sausage:

Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it into small crumbles. Remove and set aside.
Sauté Aromatics:
