Rustic Shrimp Bisque

Description

Rustic Shrimp Bisque

Ingredients:

1 lb shrimp, peeled and deveined
2 tbsp olive oil
1 leek, thinly sliced
2 potatoes, diced
2 cups fish stock
1/2 cup milk
Salt, pepper, and nutmeg to taste
Fresh parsley for garnish

Instructions:

Heat olive oil and sauté shrimp. Remove and set aside.
Cook leek and potatoes in the same pot for 5 minutes.
Add fish stock, salt, and nutmeg; simmer until potatoes are soft.
Stir in milk and blend to desired consistency.
Add shrimp and garnish with parsley before serving.
