Ingredients:
6 cups grated carrots
1 cup brown sugar
1 cup raisins
2 cups all-purpose flour
1 ½ tsp baking soda
2 tsp baking powder
1 tsp cinnamon
½ tsp nutmeg
½ tsp salt
4 eggs
1 cup vegetable oil
1 cup granulated sugar
1 tsp vanilla extract
½ cup chopped walnuts (optional)
For the Frosting:
8 oz cream cheese
½ cup butter
2 cups powdered sugar
1 tsp vanilla extract
Instructions:
Prepare the Batter: In a bowl, mix the grated carrots with brown sugar and let sit for 10 minutes. Meanwhile, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
