Description

Baked Chicken with Spinach, Bell Peppers, and Mozzarella
Ingredients:

2 large boneless, skinless chicken breasts

1 tsp olive oil

1 tsp paprika

1/2 tsp garlic powder

Salt and black pepper to taste

1 cup fresh spinach leaves

1/2 cup roasted red bell peppers, sliced

1/2 cup shredded mozzarella cheese

1 tsp Italian seasoning
Instructions:

1. Preheat Oven: Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil.

2. Prepare Chicken: Season chicken breasts with paprika, garlic powder, salt, and black pepper.

3. Assemble: Place chicken breasts in the baking dish. Layer with fresh spinach leaves, roasted red bell peppers, and mozzarella cheese. Sprinkle with Italian seasoning.

4. Bake: Bake in the preheated oven for 25-30 minutes, or until chicken reaches an internal temperature of 165°F (74°C).

5. Serve: Garnish with fresh parsley and serve with a side salad or steamed vegetables.
