Garlic Herb Steak with Roasted Potatoes

Garlic Herb Steak with Roasted Potatoes

Ingredients:

For the Steak:

2 ribeye or sirloin steaks

2 tablespoons olive oil

2 cloves garlic, minced

2 tablespoons unsalted butter

Salt and freshly ground pepper to taste

For the Roasted Potatoes:

500g baby potatoes, halved

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried rosemary or thyme

Salt and pepper to taste

For the Herb Sauce:

2 tablespoons fresh parsley, finely chopped

1 tablespoon olive oil

1 teaspoon lemon juice

1 clove garlic, minced

Salt and pepper to taste

Instructions:

1. Prepare the Potatoes:

Preheat your oven to 400°F (200°C)
.

Toss the potatoes with olive oil, garlic powder, rosemary, salt, and pepper. Spread them on a baking sheet in a single layer
.

Roast for 25-30 minutes, stirring halfway, until golden and crispy
.

2. Cook the Steak:

Season the steaks with salt and pepper. Heat olive oil in a skillet over medium-high heat
.

Sear the steaks for 3-4 minutes per side for medium-rare, or to your preferred doneness
.

During the last minute, add butter and garlic to the skillet and baste the steaks with the melted butter
.

Remove from the skillet and let rest for 5 minutes.

3. Make the Herb Sauce:

In a small bowl, combine parsley, olive oil, lemon juice, garlic, salt, and pepper
.

4. Serve:

Plate the steak and roasted potatoes, and drizzle the herb sauce over the steak. Serve warm and enjoy
.
