Gourmet Mushroom Grilled Cheese Sandwich
Ingredients:
4 slices of sourdough or artisan bread
2 tbsp butter
1 tbsp olive oil
1 cup sliced mushrooms (button or cremini)
1 small onion, thinly sliced
1 tsp minced garlic
1/2 tsp thyme leaves
1 cup shredded mozzarella or Gruyère cheese
1 tbsp fresh parsley, chopped
Salt & black pepper to taste

Instructions:
Sauté the Mushrooms
Heat olive oil in a skillet over medium heat.
Add sliced mushrooms and onions; sauté until softened and golden.
Stir in garlic, thyme, salt, and pepper. Cook for 1-2 minutes. Remove from heat.
Assemble the Sandwich
Butter one side of each bread slice.
On the unbuttered side, layer shredded cheese, sautéed mushrooms, and onions.
Top with another slice of bread, buttered side facing out.
Grill the Sandwich
Heat a skillet over medium heat.
Place the sandwiches in the skillet and cook for 3-4 minutes on each side, until golden brown and the cheese is melted.
Garnish and Serve
Sprinkle with fresh parsley for an extra burst of flavor.
