Cherry Oreo Ice Cream Roll Cake

Ingredients:

For the Base:

20 Oreo cookies (crushed into crumbs)

3 tablespoons melted butter

For the Filling:

2 cups heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

2 cups vanilla ice cream (softened)

1 cup fresh cherries (pitted and chopped)

1/2 cup crushed Oreos

For Decoration:

Whipped cream

Fresh cherries

Whole Oreo cookies

Chocolate syrup or melted chocolate

Instructions:

1. Prepare the Base:

Combine crushed Oreo cookies and melted butter in a bowl.

Press the mixture evenly into a lined loaf pan. Place in the freezer for 10 minutes to set.

2. Make the Filling:

In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

Fold in the softened vanilla ice cream gently until combined.

Add the chopped cherries and crushed Oreos to the mixture and stir lightly.

3. Assemble the Cake:

Pour the filling over the Oreo base in the loaf pan and smooth the surface.

Cover with plastic wrap and freeze for at least 4-6 hours, or overnight, until firm.

4. Decorate:

Once the cake is frozen, remove it from the loaf pan and place it on a serving plate.

Drizzle chocolate syrup or melted chocolate over the top.

Pipe whipped cream decoratively on top and garnish with fresh cherries and Oreo cookies.

5. Serve:

Slice and serve immediately for a refreshing, indulgent dessert.
