Grilled Shrimp Tacos with Pineapple Salsa Recipe
Ingredients:
For the Shrimp:
1 lb (450g) shrimp, peeled and deveined
2 tbsp olive oil
2 tsp chili powder
1 tsp smoked paprika
½ tsp garlic powder
½ tsp cumin
Salt and black pepper, to taste
Juice of 1 lime
For the Pineapple Salsa:
1 cup fresh pineapple, diced
½ cup tomato, diced
¼ cup red onion, finely chopped
1 jalapeño, finely chopped (optional)
2 tbsp fresh cilantro, chopped
Juice of 1 lime
Salt, to taste
For the Tacos:
6 small flour or corn tortillas
Lime wedges, for serving
Additional chopped cilantro, for garnish

Instructions:
1. Prepare the Shrimp:
In a large bowl, combine olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, black pepper, and lime juice. Mix well.
Add shrimp to the bowl and toss until evenly coated. Let marinate for 15-20 minutes.
2. Make the Pineapple Salsa:
In a separate bowl, combine diced pineapple, tomato, red onion, jalapeño (if using), cilantro, lime juice, and salt. Mix well and set aside.
3. Grill the Shrimp:
Preheat a grill or grill pan over medium-high heat. Cook the shrimp for 2-3 minutes on each side, or until pink and opaque. Remove from heat.
4. Assemble the Tacos:
Warm the tortillas on the grill or a dry skillet until lightly charred.
Place grilled shrimp on each tortilla. Top with pineapple salsa and garnish with additional cilantro.
5. Serve:
Serve the tacos immediately with lime wedges on the side. Enjoy the fresh, smoky, and sweet flavors!
