Grilled Chicken Rolls
Ingredients:
2 large chicken breasts, butterflied and pounded thin
1 cup mixed bell peppers, finely diced
1/2 cup fresh parsley, chopped
1/2 cup grated cheese (cheddar or mozzarella)
2 tbsp olive oil
1 tbsp garlic powder
1 tsp smoked paprika
1 tsp dried oregano
Salt and black pepper to taste

Instructions:
1. Prepare the Chicken:
Preheat the grill or grill pan to medium heat.
Season the pounded chicken breasts with olive oil, garlic powder, smoked paprika, oregano, salt, and black pepper on both sides.
2. Add the Filling:
Spread an even layer of diced bell peppers, parsley, and grated cheese over each chicken breast.
3. Roll the Chicken:
Carefully roll up each chicken breast tightly, securing it with toothpicks if necessary.
4. Grill the Rolls:
Place the chicken rolls on the preheated grill and cook for 6-8 minutes per side, or until fully cooked and golden brown.
5. Garnish and Serve:
Slice the rolls into rounds, sprinkle with additional parsley, and serve warm.
