Blueberry Cupcakes with Creamy Frosting Recipe
Ingredients:
For the Cupcakes:
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter (softened)
3/4 cup sugar
2 large eggs
1 tsp vanilla extract
1/2 cup buttermilk
1 cup fresh blueberries
For the Frosting:
1 cup unsalted butter (softened)
3 cups powdered sugar
2 tbsp blueberry puree
1 tsp vanilla extract
A pinch of salt
For Decoration:
Fresh blueberries
Blueberry syrup
Instructions:
1. Prepare the cupcakes: Preheat the oven to 180°C (350°F) and line a muffin tin with cupcake liners.
2. Mix dry ingredients: In a bowl, combine flour, baking powder, baking soda, and salt.
3. Make the batter: In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla. Gradually add the dry ingredients, alternating with buttermilk. Fold in blueberries.
4. Bake: Spoon the batter into the liners and bake for 18-20 minutes. Let them cool completely.
5. Prepare the frosting: Beat butter until creamy. Gradually add powdered sugar, then mix in blueberry puree, vanilla, and salt until smooth.
6. Decorate: Pipe the frosting onto the cooled cupcakes. Garnish with fresh blueberries and drizzle with blueberry syrup.
