Eggplant Rollatini

Ingredients:

2 medium eggplants, thinly sliced lengthwise

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1 egg

2 cups marinara sauce

2 tablespoons olive oil

2 tablespoons fresh basil, chopped

Salt and pepper to taste

Instructions:

1. Prepare the Eggplant:

Preheat the oven to 375°F (190°C)
.

Brush the eggplant slices with olive oil and season with salt and pepper.

Roast on a baking sheet for 15 minutes until softened, then let cool slightly
.

2. Make the Filling:

In a bowl, mix ricotta, Parmesan, mozzarella, egg, and half of the basil
.

Season with salt and pepper to taste
.

3. Assemble the Rollatini:

Spread a thin layer of marinara sauce in the bottom of a baking dish
.

Place a spoonful of the cheese mixture on each eggplant slice, roll tightly, and arrange seam-side down in the dish.

4. Bake:

Top the rolls with remaining marinara sauce and sprinkle with additional mozzarella and Parmesan
.

Bake for 20-25 minutes, until bubbly and golden
.

5. Serve:

Garnish with fresh basil and serve warm
.
