2finely chopped scallions
2tbspfinely chopped red bell pepper
1tbsplight mayonnaise
2tbspfresh cilantro, or parsley
1/2lime, juiced
kosher salt and black pepper , to taste
cooking spray
For the Zesty Chipotle Lime Sauce:
1tbsproasted peppers, jarred
1/4cuplight mayonnaise
1teaspoonminced canned chipotle in adobo sauce, or more to taste
1teaspoonfresh lime juice
