1ripe avocado

½tomatodiced

½small oniondiced

¼teaspoonsaltto taste

¼teaspoonblack pepperto taste

Instructions

  • Preheat your air fryer to 350 degrees.
  • Remove the peel of the plantain. First cut off the ends of your plantain on both sides, and then make an incision into the peel lengthwise, but make sure you don’t cut into the plantain. This makes it easier to remove the peel.

Slice your plantain with a mandolin slicer, as thin as possible.

  • Mix the sliced plantain, coconut oil, salt, and pepper and massage onto all the plantain pieces, to make sure they all absorb some of the coconut oil.
  • Place the plantain pieces in the air fryer in a single layer (you will probably have to work in 2 or 3 batches).
  • Cook each batch of plantain pieces for 9 to 11 minutes, or until golden brown and crispy.
  • While your plantains are in the air fryer, make your avocado dip.

Peel your avocado and remove the pit, then mash the avocado in a small bowl.

  • Dice your tomato and onion and add them to the mashed avocado.

Season with salt and pepper and set aside.

  • Let the chips cool for a few minutes, and then serve with your avocado dip.
