
Description
Chicken stew (pollo guisado) is one of my favorite comfort foods, and my whole family loves it. I made this three times the past two weeks, that’s how good this was! I wanted to take advantage of fresh summer corn in season and this turned out wonderful!
Yield: 4Servings | Serving Size: 2drumsticks 1/2 corn
Ingredients
8skinless chicken drumsticks, 28 oz
1/2teaspoonkosher salt
1/2teaspoongarlic powder
1teaspoonolive oil
1/2medium onion, chopped
3scallions, chopped
1plum tomato, diced
1garlic clove, crushed
1/4cupchopped cilantro, plus 1 tbsp for garnish
8ozcan tomato sauce
2cupswater
1tablespoonChicken Better Than Bouillon
1/2teaspooncumin
2corn on the cobb, husked and halved
Instructions
Season chicken with salt and garlic powder.
Saute the onions, scallions, tomato and garlic in olive oil until soft, 2 to 3 minutes. Add 1/4 cup cilantro and stir 1 minute. Add tomato sauce, water, Bouillon, cumin and stir. Place the chicken in the sauce. Top with corn, cover and cook on high pressure 20 minutes. Natural release and top with remaining cilantro.
- To make on the stove, simmer low covered 40 minutes adding the corn the last 5 minutes.
