2.5cupscooked quinoaabout 1 cup uncooked
¼fresh cup spearmintchopped
1cupfresh curly parsleychopped
2cupschickpeasrinsed and drained (about 1 x 397 ml can)
1cupcucumberdiced
1cupfetacrumbled
1avocadodiced
1cupred oniondiced
2lemonsjuiced
¼cupextra virgin olive oil
Saltto taste
Black pepperto taste
Instructions
- In a large mixing bowl, add quinoa, mint and parsley.
- Top base with chickpeas, feta cheese, cucumber, avocado, and red onion. Drizzle with lemon juice and olive oil. Season with salt and black pepper,to taste.
