Savory Sweet Potato Muffins

These savory sweet potato muffin s are a healthy muffin perfect for any time of the day! Packed with flavor, a great source of protein, and only 15 minutes of prep!

Ingredients

1sweet potato(about 2 cups)

5eggs

1cupNordica 2% Cottage Cheese

2cupsall purpose flour

1teaspoonbaking powder

½tsp chili powder

½teaspoonground cumin

1tsp salt

¼cuppickled jalapenosdiced

⅓cupsliced green onionswhites and greens

⅓cupcheddar cheeseshredded

Instructions

  • Preheat the oven to 400F and prepare a 12-cavity muffin tray.
  • I n a medium bowl, whisk together mashed sweet potato, eggs and cottage cheese.
  • To the wet ingredients, slowly add flour, baking powder and spices. Mix well.
  • Mix in the green onion, pickled jalapenos and cheddar cheese (ensuring you save some cheddar cheese for topping).
  • Divide the batter between 12 muffin cups (about ⅓ cup of batter per muffin cup). Top with remaining cheese. Bake for 23-27 minutes, or until a toothpick inserted into the center of the muffin comes out clean.

Notes

To cook your sweet potato:

  • _Microwave cooking method_ Pierce each potato multiple times with a fork and cook one at a time in the microwave for about 3 minutes each side (until soft, this may vary based on your microwave), carefully remove from microwave and allow to cool before removing the skin and mashing the inside.
  • _Oven cooking method_ Preheat oven to 425ºF. On a baking sheet lined with aluminum foil, prick sweet potatoes all over with a fork. Bake until tender, 45 to 50 minutes.
