Ingredients
½cupcashew butter
¼cuphoney
1teaspoonvanilla extract
Juice of 1 medium lemon
Zest of 1 medium lemon
1+ ¼ cup almond flour
¼cupvanilla protein powder
1teaspoonground turmeric
¼cuppoppy seeds
Unsweetened shredded coconut flakesfor sprinkling, optional
Pinch ofblack pepperoptional
Instructions
- In a medium mixing bowl, whisk together cashew butter, honey, vanilla extract, lemon juice and lemon zest.
- Once mixed, add almond flour, vanilla protein powder, turmeric and poppy seeds and stir to combine.
- Roll into about 11 rounded tablespoon sized balls and sprinkle with coconut flakes.
