Chocolate Peanut Butter Frozen Greek Yogurt Bites

These Chocolate Peanut Butter Frozen Greek yogurt Bites are cold, creamy and sweet. The perfect post-meal sweet treat! I am a big fan of the post-meal sweet treat, and I know you probably are too.

Ingredients
1banana
1cupplain Greek yogurtvanilla would also be great
1teaspoonvanilla extract
¼cuppeanut butter
¼cuppeanutschopped (optional)
½cupdark chocolate chips
1tablespooncoconut oil
Instructions
- In a medium mixing bowl add banana, and mash using a fork or potato masher. Once mashed, add greek yogurt, vanilla extract, peanut butter, and chopped peanuts (if using). Mix to combine.
- In a small bowl add chocolate chips and coconut oil. Microwave in increments of 30 seconds, stirring between until the chocolate is fully melted (you may also use a double boiler to melt chocolate).
Once the chocolate is melted pour about 1 teaspoon of chocolate into the silicone ice cube tray, use a spoon to gently press the melted chocolate along the walls of the tray. Once all walls are covered, place the tray in the freezer for about 5 minutes until the chocolate has set.
Once the chocolate has set, fill each mould with the peanut butter yogurt filling (about 2 tablespoon in each- depending on the size of your tray).
Drizzle the tops of the filing with a layer of melted chocolate (about 1 tsp) – it should be thin enough to spread however if needed you may gently smooth it out using a spoon. Ensure the chocolate is still fluid before pouring, as you do not want it to be too thick. Freeze for about 2 hours. Store in the freezer and enjoy straight out of the freezer (I recommend allowing to thaw for about 2-5 minutes on the counter before eating)!

Notes
Depending on the size of your ice cube tray, you may have more or less frozen yogurt bites.
The type of Greek yogurt will effect how creamy these yogurt bites are. A higher fat yogurt, such as 5%, will result in a less icy consistency.
