
Description
This delicious fall or winter Shaved Brussels Sprout Salad is made with juicy ripe pears, vibrant pomegranates, crunchy pepitas, and creamy goat or feta cheese.
Yield: 6servings | Serving Size: 1cup
Ingredients
3tablespoonsextra virgin olive oil
1tablespoonminced shallots
2teaspoonsDijon mustard
3tablespoonsapple cider vinegar
4cupsthinly shredded Brussels sprouts, 12 oz total*
1/4teaspoonkosher salt and black pepper, to taste
1large ripe red pear, cored and diced
3/4cuppomegranate seeds
1/4cuppepitas, toasted
1/4cupcrumbled goat cheese, or feta
Instructions
- For the dressing, whisk olive oil, Dijon, shallots and vinegar with a pinch of salt and black pepper.
Pour the dressing over the shaved Brussels sprouts in a large mixing bowl and season with 1/4 teaspoon salt and black pepper, to taste.
Toss well then transfer to a large salad bowl and top with pears, pomegranate, pepitas and cheese.
