Ingredients
3cupsgreen cabbage, shredded
2cupspurple cabbage, shredded
1cupcarrot, shredded
Dressing
1tablespoonshallots, minced
2teaspoonsDijon mustard, whole grain or smooth
2tablespoonswhite wine vinegar
1/2cuplight mayonnaise
1/2teaspoonkosher salt
black pepper, to taste
Instructions
- Add the shallots, mustard, and vinegar into a bowl, whisk to combine.
- Whisk in the mayo, salt and pepper and whisk until smooth.
- Toss with cabbage & carrots. Refrigerate at least 30 minutes before serving to allow flavors to blend.
