¼ cup (50 g) granulated sugar
⅛ teaspoon kosher salt
1 teaspoon pure vanilla extract
¼ cup seedless strawberry jam
½ pound fresh strawberries, hulled and sliced 1/8-inch thick
Egg wash, (1 egg + 1 tablespoon water, beaten)
Coarse sugar, for sprinkling (optional)
1 cup (115 g) confectioners’ sugar
1 tablespoon milk (any kind), plus more

MAKE THE FILLING
In the bowl of your stand mixer fitted with the paddle attachment or a large.
